Copycat Taco Bell Quésadilla









INGREDIENTS
FOR SAUCE

  • 1 C. Mayonnaise
  • 3 tablespoons. marinated jalapeño juice
  • 3 tablespoons. jalapeños marinated chopped
  • 2 tbsp. garlic powder
  • 2 tbsp. cumin
  • 2 tbsp. paprika
  • 1/2 c. Cayenne
  • Kosher salt

FOR THE ASSEMBLY
  • 8 medium flour tortillas
  • 4 c. shredded chicken
  • 2 tbsp. Monterey Jack shredded
  • 12 slices of American cheese (or cheddar cheese)


DIRECTIONS

  1. Prepare the sauce: in a medium bowl, whisk together mayonnaise, jalapeño juice, minced jalapeños, garlic powder, cumin, paprika, and cayenne pepper. Season with kosher salt.
  2. In another medium bowl, add the chicken. Mix the chicken with half of the quesadilla sauce. Put the rest aside to soak.
  3. In a large skillet over medium-high heat, add a flour tortilla. Cover with 2 slices American cheese and ½ cup chicken, then sprinkle with ½ cup Monterey Jack. Place the second tortilla on top. Cook until bottom tortilla is golden, about 2 minutes, then turn and cook until the second tortilla is browned and the cheese has melted, about 2 minutes longer.
  4. Repeat the process with the other ingredients to make 3 additional quesadillas. Slice into quarters and serve hot with remaining sauce to soak.
