  • 220 g/7 oz container sun dried tomato strips in OIL 
  • 120 g/4 oz rocket/arugula lettuce , hacked into 5 cm/2" pieces 
  • Get-up-and-go of 1 vast lemon 
  • 5 tbsp new lemon juice (2 vast lemons) 
  • 1/2 tsp coarsely ground dark pepper 
  • 60 g/2 oz feta , disintegrated 
  • Salt and pepper , to taste 



Directions :
  1. Spot chickpeas, couscous, vegetable stock powder, coriander and garlic in a huge bowl. Pour over boiling water, shake to level out couscous (chickpeas ought to for the most part settle on top). Spread with plate or stick wrap, put aside for 5 minutes.
