Fixings 

  • 6 new wantan noodles 
  • A heap of choy total, washed and cut 
  • For shallot oil 
  • 3 shallots, finely cut 
  • 6 tbsp cooking oil 
  • For wantan mee sauce (per serving) 
  • 1/2 tbsp dull caramel sauce 
  • 1/2 tbsp light soy sauce 
  • 1/2 tbsp shellfish sauce 
  • 1 tbsp shallot oil 
  • To serve: 
  • Hand crafted pork and prawn wantans (formula here) 
  • Hand crafted roast siew (BBQ pork) (formula here) 
  • Cured green chillies (formula here) 

Steps 

  1. For the shallot oil: In a wok, heat oil over medium warmth. When the oil is hot, include the shallots and cook for 7-8 minutes, mixing sporadically, until the shallots are brilliant dark colored. Expel from warmth and put aside. 
  2. Convey a huge pot of water to the bubble. When bubbling, include 1 bit of noodle and cook for 1 - 2 minutes (trial a strand to check for doneness), at that point wash in virus water. Rapidly whiten again in the boiling water for 5 seconds and channel.
